So, Monday night I decided to try to make some BBQ chicken in my crockpot to shred for sandwiches and whatnot.
My recipe said to cook on high for 4-6 hours or low for 6-8 hours.
Since John & I act way older that we actually are, we go to bed early. Like by 9. So I turned the crockpot on low right before we went to bed. Obviously, I had no intention on getting up at 3am or 5am to check the chicken. I kinda figured it would be okay to cook it for 9-10 hours.
WRONG!
Seriously, the chicken was burnt to a crisp! And the bbq sauce seems like it will be forever burnt to the bottom of my crockpot.
OOPS!
So, yeah...learned a good lesson. If a recipe says 6-8 hours, and you're using thin chicken breasts, don't try to cook them for 10 hours.
BAD IDEA.
I'm going to try again this weekend. Probably on high, and will watch much more closely!
Although, I can't decide if I should make my second attempt with chicken or pork. Because a BBQ pulled pork sandwich sounds pretty stinking good! But BBQ chicken sandwiches sound good too...decisions, decisions.
